Egg Free Monster Cupcakes

Our youngest child celebrated his 2 year birthday the first week of December. Unfortunately, he is allergic to eggs and has never had a cupcake so I was determined to find a way to make some quick and easy eggless cupcakes. After a couple of trials, I think I have finally come to the perfect quick cupcake recipe using a cake mix.

For the Cake you will need...

1 Betty Crocker SuperMoist Cake Mix
1 Cup of Water
3 TBSP of Club Soda
2 TBSP of mashed Banana (approx. half a banana)
1 TBSP of Vegetable Oil
Cupcake liners

Mix ingredients together and follow the baking directions on the box.


For the Frosting you will need...

Cake Mate Decorating Icing in various colors and White (not the gel)
Chocolate Chips

I chose not to use the tips that attach to the end.  I created the monster hairs by squeezing out a little frosting and then pulling up in a quick motion as I released pressure from the tube to create a point. Start in the center and continue all the way around the cupcake leaving a spot for eyes. With the white Icing, I filled in the blank spots to create eyes and then finished with an upside down chocolate chip centered in the white.

Super quick and easy EGG FREE cupcakes and they taste delicious!

8 years...

Today, our daughter turns 8 years old... honestly, where does the time go??? In just eight more years she will be driving... or flying as she told her Poppy {aka: my dad}. Poppy, she just might make you stick to your word to paint your airplane pink and hand the keys over to her when she turns 16 and gets her flight license. She has been flying with her Poppy since she was 3 years old and loves it!

She even dressed as a Pilot for career day last week at school.

Happy Birthday to our little sweet pea! You are the strongest little girl I know and one of the sweetest. I am so honored to be your mommy and love being able to watch you grow into a little lady.

Today was such a wonderful day! It was filled with all kinds of 3's....

The Date... April 3, 2013
Today... I turned 33 
This morning I woke up to a wonderful surprise in my bed from my 3 Kiddos...

Then they surprised me with 3 wonderful birthday gifts at breakfast...

At my Crossfit OTB workout, the class named our WOD (workout of the day) after me, then made me stand on my hands for a birthday picture, and then they all sang Happy Birthday to me. IT WAS AWESOME! I love my Crossfit Family! These girls rock!

After a morning full of fun and surprises {all before 9:30 am!}, I was ready to start my day of work.

 Later this afternoon, I was surprised with another birthday gift brought by the wonderful UPS man... 3 boxes of Cheryls Co. Cookies from everyone at C&T Publishing wishing me a Happy Birthday! YUM! Thank you C&T Publishing and Stash Books!!!

For Dinner, we went out to eat at our favorite family restaurant, Corner Bakery, with my favorite people. <3

 It was the best 33rd Birthday EVER!!!! I couldn't have asked for anything more!

SO... to celebrate the last 3 minutes of my birthday, I am going to extend it for 3 more days... because I want to and I can.  I am going to give 3 lucky readers a birthday package of 3 of my favorite things....

1 year old!

I cannot believe how much Roman has grown and developed in just 1 year. Why does time seem to go by so much faster as we get older?  I remember as a kid hours seemed like days and days seems like weeks. I sometimes wish it would feel like that again cause lately the time just seems to be flying by way too fast.

 

At 1 year old, Roman is weighing in at 21 lbs. 7 oz and is about 30" tall. Had his 1 year shots today and the poor thing has an ear infection. :(  Not fair to be sick on your birthday.

 

He is walking, jabbering, and has absolutely no fear. Will have to watch out for this kiddo... he is into everything and has such a fun and outgoing personality. I can't wait to see what the next year with this kid brings.

My Birthday Girl

My little girl turned 7 today! I can't believe how big she is getting.

We celebrated with a pizza party and sleepover Friday night. It was so much fun! A night full of decorating flip flops, playing telephone, making cootie catchers, sitting on balloons until they pop to get the special prize hidden inside, and so much more. The girls finally crashed at 2 am.

Happy Birthday to my sweet seven year old. Love you lots <3.

This morning I received this yummy Cheryl's package from my book publisher, C&T Publishing / Stash Books.  The boxes were filled with Chocolate Chip, Oatmeal Raisin, Chocolate covered Pretzel Clusters, and Buttercream Cut-out Cookies... YUM!

It was my birthday this past Tuesday... 32 -  WOO HOO! I am loving my 30s. I am not sure why some people hate turning 30... I was actually looking forward to my 30s.

The kids even enjoyed their pick of cookie.

Matthew's Birthday Party

Sunday, we celebrated Matthew's 4th Birthday with some of our friends and family.  I had originally planned to have the party at our house and have a bounce house/slide combo as their entertainment.  W-e-l-l... that quickly changed to a Bowling Party when I checked the weather and they forcasted 60% chance of rain on Sunday {warning... you cannot trust a weather man.} It ended up being a beautiful Sunday afternoon outside and a BLAST of fun on the inside.  {Not to mention I did not have to stress about cleaning my house before and after the party :) I think that was the best part of it for me.}

The party was Awesome! We had a wonderful party host, lots of fun, pizza, cake and games! Oh.. .and did I mention... I did not have to do anything! Just show up bring some cupcakes, kids, and have FUN! 

 These bowling ramps are the best thing ever invented for little kids. 

 oh... and the bumpers too.

 Guaranteed score everytime!

 Matthew even received a souvenier bowling pin that everyone signed.

 It's not a party unless there is some dancing involved... Matthew got right up there with the host and they danced to Casper's Cha Cha Slide

 After all the bowling and dancing, we ate CAKE! I love this picture of my little man trying to blow out all his candles.  Look at those cheeks!

Matthew turned 4!

Today Matthew turned FOUR!

I cannot believe how big he has grown in such a short time. 

He loves all things Robots, Transformers, and Buzz Lightyear.

He can spend hours building robots and cars from Legos.

He is my ultimate cuddle bug!

A horse is horse, of course, of course...

For Paige's 5th Birthday she wanted a HORSE party.  So here is a little recap of the Horse party we came up with. 

The kids watched Spirit: Stallion of the Cimarron  {a horse movie}... Paige really likes this movie and it was her idea to have a movie party. We ordered in Pizza and had Popcorn with the movie. I found these cute little Popcorn holders from the fabulous Hobby Lobby stores.

I gathered up all of Paige's horses and used them for decorations along with some Red Bandana tablecloths and towels and a matching quilt for all the kids to sit on while watching the movie.  You can get these great Moda Home items from Home a la mode.

Stick Horses as little giveaways for all her little friends.  (SCORE: a buck each from the Dollar Tree!)

Added a bit of grosgrain ribbon to pretty them up.

To top it all off, I made her a pillow case dress that had an embroidered Horse on it. 

I think I will be making her some more of these for the summer... SUPER EASY and QUICK to make.  Thanks to Craft Challenge: Dozens of Ways to Repurpose a Pillowcase book.

Everyone seemed to have a blast.... especially this big girl.

Spider-man Turns Three!

Spider-man aka Matthew {my youngest} turns three on Sunday and we plan to have all kinds of Super Heros at our house for a big birthday bash!


He even made the cover of the Daily Bugle!
